Serves: 2- Preparation time: 5 mins- Cooking time: 10 mins

Ingredients

1 tbsp low-sodium soy sauce

1 tbsp sesame oil

3 tbsp lime juice

200 g salmon fillet

Handful broccoli florets

Handful snow peas

1 red pepper

Handful coriander

Handful fresh egg noodles

2 tbsp sesame seeds

Method

- Mix the soy sauce, sesame oil and lime juice in a bowl then brush it over the salmon fillet. Grill the fish for 10 minutes, basting with dressing.

- Steam the broccoli and snow peas until they soften (three to four minutes). Put them in cold water so they retain bite. Chop up the red pepper and finely shred the coriander.

- Put it all in your lunch box with the egg noodles, sprinkle with sesame seeds
