THAI BEEF TATAKI  NOODLES - Get your protein fix with a generous helping of ramen

Ingredients

350 g sirloin, sliced

400 g fresh ramen noodles

200 g beansprouts

4 soft-boiled eggs

1 handful fresh coriander leaves

3 oz.Soy sauce

1 1/2 oz. fish sauce

2 limes, juiced

Method

- Quickly sear the generously-seasoned and lightly-oiled beef in a smoking hot pan for 10 seconds on each side, then refrigerate. Whisk together the tare ingredients and divvy up between the bowls with the stock. Drop in cooked noodles, beans sprouts, eggs (marinaded as before) and the beef. Finish with coriander and as much sliced red chili as you dare. 

Serves: 2-4 - Cooking time: 20 minutes - 246 calories (Per serving) - 24g protein - 8g carbohydrates - 9g fat (2g saturated) - 2g fibre
