15-MINUTE CHICKEN FAJITAS Become Speedy Gonzales with this super quick-fix Mexican chicken dish

Serves: 1 - Preparation time: 7 mins - Cooking time: 8 mins
Ingredients
1 chicken breast fillet
2 tsp dried paprika
1 tsp olive oil
50 g pre-chopped onion
50 g pre-sliced mixed peppers
1 tsp pre-crushed garlic
1 medium tomato
1 small avocado
2 soft tortillas
4 tsp fat-free natural Greek Yogurt
Method
- Cut the chicken into thin strips then mix with the paprika and set aside.
- Heat the oil, then fry the onions, red pepper and garlic until soft. Add the chicken and cook for a further four minutes, making sure the chicken is cooked through.
- Chop the avocado and tomatoes then split, along with the chicken mix, between the tortillas. Serve with a dollop of yogurt on the side for dipping. Or wrap it in foil and eat later.
