Serves: 2 - Preparation time: 2 mins - Cooking time: 50 mins
Ingredients
200 g rice
5 tbsp pinto beans
3 chicken breasts, grilled and shredded
Handful coriander
2 large tortillas
220 g salsa
4 handfuls lettuce, shredded
Big handful monterey jack cheese, grated
Hot sauce, to taste
Method
Wash your rice a few times to get rid of excess starch, then boil until tender. Drain, then cover with a tea towel to steam-dry and give you perfect fluffy grains.
Now take a pan and saute the washed pinto beans, chicken strips and the rice for two minutes, adding the coriander at the last second for a fresh, fragrant bite.
Wrap it up by building your burrito with the lettuce, cheese, beans, salsa and hot sauce to taste.
