BUTTERED QUINOA WITH SWEETCORN AND JALAPEÑOS

Serves: 1 - Preparation time: 10 mins - Cooking time: 40 mins

Ingredients

  • 100 g quinoa

  • Olive oil, splash

  • 1/2 onion, diced

  • 150 g sweetcorn

  • 1/2 jalapeño chilli, finely chopped

  • Cumin, pinch

  • 20 g butter

  • Coriander, handful, chopped

Method

First, toast the quinoa in a pan for a minute, then set it aside in a bowl.

Heat the oil in a saucepan and add the onion, corn and chilli. Season and sauté for 10minutes until the onion is soft, stirring frequently. Add the cumin and cook for a minute more, then the quinoa with 500ml water. Bring to the boil, then lower the heat. Simmer for 20min until the quinoa is tender to the bite. Drain, stir in the butter and serve with coriander.
