Serves: 1 - Preparation time: 2 mins - Cooking time: 4 mins
Ingredients
100 g chicken breast
2 tsp Chinese 5 spice
150 g mixed frozen vegetables
200 g pre-cooked rice
2 eggs, beaten
Method
Slice the chicken and toss in the spices. Stir fry for 3-4min.
Meanwhile, boil the veg until it’s cooked, but with a little bite.
Microwave the rice according to the trusty packet, then chuck it in the chicken pan with the egg. Stir until the eggs scramble, then add the vegetables last.
