MUSCLE-BUILDING CHICKEN AND RICE The nights are closing in and, when you're getting home late in

Serves: 1 - Preparation time: 2 mins - Cooking time: 4 mins

Ingredients

  • 100 g chicken breast

  • 2 tsp Chinese 5 spice

  • 150 g mixed frozen vegetables

  • 200 g pre-cooked rice

  • 2 eggs, beaten

Method

  • Slice the chicken and toss in the spices. Stir fry for 3-4min.

  • Meanwhile, boil the veg until it’s cooked, but with a little bite.

  • Microwave the rice according to the trusty packet, then chuck it in the chicken pan with the egg. Stir until the eggs scramble, then add the vegetables last.
