BLUEBERRY PB & J MUFFINS Beat the Monday blahs with this nutritious brekkie snack!

Ingredients
2 English muffins, halved
6 tbsp peanut butter
120 g cottage cheese
4 tbsp blueberry jam
Method
Eschew the depressing offerings slowly drying-out and dying under the heat lamps of your local coffee shop counter. In minutes you can fix yourself a hand grenade of brain-energizing nutrients that will be in your mouth in seconds! Start by sticking the muffins in the toaster. The fact that they are the carb equivalent of 2 slices of bread is the point,- you’ll feel more satiated and less likely to snack later, so cheer up!
When they pop, top each muffing with peanut butter and then cottage cheese. This unusual pairing provides a decent does of casein protein for a lasting release of energy. Not keen on the lumpy consistency? Throw it in the blender for 30 seconds, if you’ve got time.
Top with blueberry jam and the rest of the PB. Then apply to mouth liberally. You’ll be ready to brave the day by the time you get to the front door and be full until lunch.
